Matcha Macadamia Muffins

Today I made matcha macadamia muffins!

Ingredients:

  • Butter: 100g
  • Sugar: 80g
  • Salt: a little bit
  • Egg: 2
  • All purpose flour: 200g
  • Matcha powder: 10g
  • Baking powder: 1 tsp
  • Milk: 70cc
  • Macadamia nuts: 145g

Icing:

  • Powdered sugar: 40g
  • Matcha powder: 2g
  • Water: 10cc

Direction:

  1. Bring butter to room temperature. Pre-heat the oven to 355F.
  2. Add butter in a bowl and mix well until the butter become creamy.
  1. Add sugar and mix well, then add salt.
  1. Beat eggs in a different bowl and add it to #2 and mix well.
  1. Add flour, matcha powder, and baking powder and mix. No need to mix completely yet. Add milk to it and mix well.
  1. Use a food processor and cut the macadamia nuts small. I stopped it unevenly as I wanted some chunks in the muffin.
  1. Leave some nuts on the side for toppings and add the rest of it into the batter and mix well.
  1. Move the batter into cups.
  1. Flakes the macadamia nuts from on the top of the batter.
  1. Bake in the oven for 20 to 25min. When it’s done, take it out from the oven and cool it down.
  1. Now, preparing the icing. Mix powdered sugar and matcha powder and add water slowly. Use a spoon and mix like kneading.
  1. Pour the icing into a ziploc bag and cut a corner to decorate when the muffins are cooled down. Ready to serve. Enjoy~!!
