Matcha Cookie 💛

Today’s recipe is Matcha Cookie. My husband got a Matcha powder from Amazon and wanted me to bake cookies. So, here’s my first time trial. Less sweet than the kinds you get from a grocery store, but it’s perfect with a cup of coffee. (If you prefer a sweeter cookie, I would recommend to increase the amount of sugar)

Matcha Cookies

Ingredients:

  • Unsalted Butter : 80g
  • Sugar : 80g
  • Egg : 1 Large
  • Vanilla Essence : few drops
  • All-Purpose Flour : 200g
  • Baking Powder : 1/2 tsp
  • Baking Soda : 1/2 tsp
  • Matcha Powder : 1 tbsp or more if you like ← you can substitute with a cocoa powder

Bring the butter to room temperature. Cutting the butter into 1 inch cubes will speed up the process. The point is not to melt the butter in liquid form. (I used a microwave about 20 sec. since the butter was frozen). If the butter is in liquid form, the dough will become too wet.

Once it’s softened, mix the butter until it looks like a mayo.

Add sugar slowly as you mix.

Beat the egg well and add it slowly to Step 2 as you mix. Then, add vanilla essence and mix well.

Add flour, baking powder and baking soda into Step 3 and mix with a spatula. If it is too hard to mix, use hand to put all dough together.

Add Matcha powder (or your favorite flavor) and knead well.

I split 1/3 of dough on the side to make mixed flavor. This will be used as a plan flavor.

Place a plastic wrap on the counter and create 2 cylinder shapes for each flavor on the wrap. Stack them alternately like in the photo.

Wrap it tight and put it in the fridge for about an hour. I did the same to the matcha only dough to make it easy. If you have a cookie cutter, you can make it flat.

After an hour, the dough should be harder.

Pre-heat the oven at 340F. Take the dough out from the fridge and cut it in about 1/4 to 1/2 inches thick.

Bake it for 15 to 20 min.

What I learned is that after 15 min the dough was still a little bit soft, but turned off the oven and by leaving it in the oven for few min, it got hardened. (Make sure it doesn’t get burnt)
